tasty chicken salad

This chicken salad is really delicious, tasting and light. It's also fairly quick and easy to make, suits for a buffet or where more people than usual come together to eat. The chicken can be fried in a pan but it is also good grilled. Then the attractive grill flavor is added with a pleasant flavor flora. This is a great meal to prepare beforehand. It´s as great served slightly warm or cold. 

4 chicken breasts, cut in half, fried or grilled


marinating:
1/4 c olive oil 
1/2 teaspoon cummin
1/2 teaspoon paprika
2 garlic cloves, chopped

1 zucchini, sliced
2 red onions, cut into fairly thick slices
3 red peppers, cut into slices
8 boiled potatoes, rather small, cut in half
10 sherry tomatoes, cut in half
1/2 c black olives

sauce:
1/2 c sour cream
3 tablespoons fresh lemon juice
1 garlic cloves, chopped finely
1 teaspoon paprika
1 teaspoon cummin
1/2 teaspoon strong chillisauce
1/2 c fresh coriander, chopped

Stir together all ingredients for the marinating, divide in two bowls or food processing bags. Place the chicken in one half of the marinating and the zucchini, onions, peppers and potatoes in the second half, mix well and let stand for at least 30 minutes. Can be done the day before. Grill or fry the chicken until cooked through. Place the vegetables in the marinating on a baking tray and grill in the oven until soft and golden. Stir together all ingredients in the sauce. Cool the chicken slightly before it is cut into slices. Mix gently the chicken, grilled vegetables, tomatoes and olives together in a bowl. Stir in the sauce. Serve.
