Fresh salad with honey mustard dressing
Salad of your own choice
1 grape or an orange
1 avocado, thinly sliced
1/2 red onion or 3 spring onions, thinly sliced
1 yellow pepper, thinly sliced
Blueberries or other berries of your choice
Raisins or Goji berries
Mozarella, torn down
Put the salad and all ingredients nicely on a plate for each person or on a one big one.
100 g pecan or cashew nuts, almonds can be used
1 tbs soya or tamarin sauce
Put the nuts in the blender and mix well, drip the sauce over and give it an extra pulse. Drizzle over the salad.
Honey mustard dressing:
2 tbs lime or lemon juice
2 tbs honey
2 tbs poppy seeds
1 tbs honey mustard or dijon
salt and black pepper
200 ml extra virgin olive oil
Put all the ingredients in a blender and mix thoroughly or until the dressing becomes thick, light and creamy. Drip over the salad.
For 2 persons as a meal – 4 persons as a side dish.
