a foolproof stew with dumplings

Amazingly delicious and easy stew to cook. Pleasant alternative to cook the thyme dumplings in the pot. When the stew gets this time to slowly cook it brings out unique flavor and the meat becomes very soft. The dumplings make this even better.

Beef stew with thyme dumplings

4 tbsp olive oil
2 onions, chopped
4 garlic cloves, minced
2 inches fresh ginger, chopped or shredded
1 teaspoon cinnamon
1 teaspoon cummin
1.2 kg beef of your choice, cut into 2-3 cm pieces
4 carrots, in 2 cm pieces
4 tbsp tomato paste
2 dl red wine
1 l beef stock
Season with salt and pepper
2 tbsp parsley for decoration, minced

Thyme dumplings:
100 g flour
2 teaspoons baking powder
½ onion, finely chopped
1 tbsp dried thyme
2 tbsp parmesan, grated
salt and pepper to taste
25 g soft butter
2 tablespoons milk

Preheat oven to 180C/358F. Use an ovenproof casserole. Heat 2 tbs of the oil and soften the onion. When softened, add the garlic and ginger, cinnamon and cummin and stir together. Remove from the heat. Brown the beef in a pan in 2 tbs of oil. Stir into the onion mixture. Put the carrots, tomato paste, red wine and stock to the casserole, add some water if needed so the liquid floats over the stew. Season with salt and pepper.
Put the lid on the casserole, or some aluminum foil if you don’t use that kind of an ovenproof dish. Transfer to the oven. Slowly cook for 90 minutes or longer if you’ve got time. Make the dumplings while the stew cooks.
Sift the dry ingredients together. Stir the onion to it. Add the butter and pour in the milk. Knead the dough well together. It should be quite thick. With floured hands, roll spoonfuls of the dough into small balls.
Remove the lid from the casserole after these 90 minutes...or more. Place the balls on top of the stew. Cover. Return to the oven for 15-20 minutes or until the dumplings have swollen and are tender. Garnish with chopped parsley. Serve with mashed potato or rice.
