One of our favorite recipe. So simple to enjoy and so simple to make. The story of this recipe goes like 13 years back when we interviewed a great woman in Hveragerði who had studied Italian cuisine. She gave us some recipes that have always been my favorites and this is one of them. You should try it. It will be regularly on your menu for years to come.
4 chicken breast
4 tbsp olive oil
2 tbsp vinegar of your choice
2 tbsp lime or lemon or lime juice, grate the rind and combine
salt and pepper
1 tablespoon Dijon mustard or grain mustard, you can skip it
Mix all the ingredients for the marinate, add the chicken breasts and combine. Marinate for at least an hour. I find it easiest to put the chicken in the oven, at 180 degrees for about 20-30 minutes. Of course you can pan fry or bbq the breasts. Cooking time depends on the thickness of the breasts. Serve the chicken hot.
quality bread - baguette or sour-dough bread
100 g butter
2 garlic cloves, minced
2 tbsp good olive oil
fresh coriander, cilantro
mozzarella cheese, sliced
Melt butter on low heat in a pot, place the garlic and simmer on low heat. Stirring the oil in. Cut the bread in slices or the baguette length wise and slightly grill in a hot oven.
Drizzle the garlic butter over the bread. Add some mozzarella, chicken breast in slices, rucola and coriander. Here you can taste it with some salt and pepper. Serve.
Notice that this is an incredibly easy and delicious dish that can be served with so much more trimmings. Tomatoes, mozarella and fresh basil is a classic combination. All vegetables, fresh, grilled or marinated. Cheeses of various kinds. Enjoy all the great varieties this recipe has to offer for years to come...as we have!
