This is such a good dish! You should try it. Pulled pork served in a baked sweet potato with pickled vegetable and sour cream. Pulled pork and pickled veg takes some time to cook BUT not for you to make. The pork should be in the oven for some hours, but it takes you minutes to prepare. The same goes for the veg. The originality of this dish is from a nice restaurant in London we like to visit when we're there, Muriel's kitchen. Once we had it there and when back home we searched on the web to put together some recipe for it. The recipe following is the one we use when making it for our family. Enjoy! 

Pulled pork

1 kg pork shoulder
1 tbs black pepper
pinch of salt
1 tbs brown sugar
2 tbs soy sauce
1 tsp five-spice powder
2 dl water or some juice, like pomegranate

Heat the oven to 90 degrees if you're going to cook the pork for 8 hours or to 120 degrees if you're cooking the meat for 3-4 hours. 
Brown the pork in a pan in some olive oil, put some salt and pepper. Take off the pan and put in an oven proof pot or a pan. Mix sugar, soy sauce and five-spice powder together and rub on the meat all over it in the pot. Add the water or juice in the pot. Put the lid on and in the oven it goes. 
When cooked of your choice, let the pork stand for some minutes before tearing and pulling it down with two forks. Put in a bowl and drizzle with some juice from the pot. Keep the stock from the pot. 

Pickled vegetable

1 cup water
1 cup white wine vinegar
2 tbs salt 

Yellow and red peppers
 Red onion

Slice the veg thinly. Put the ingredients for the liquid in a pot and add the veg. Boil on medium heat for 30 minutes or until the veg have softened. Drain the veg quite well and put in the marinade. 

6 tbs olive oil
1 tbs sugar
1 tsp cumin
1 tsp cilantro/coriander
2 cm fresh ginger, finely grated
juice from one lime

Mix all together and put the vegetable in. Put in a jar and close it or put some cling-film on the bowl. Let it marinade for 2-4 hours at least. It keeps for days in the fridge. 

Baked sweet potatoes
Cut potatoes half and half as one part is usually enough for one serving, but of course not if the potatoes are in good size. Pick with knife and rub it with some olive oil. Cover each half in aluminium foil. Bake for around 45 minutes on 180 degrees, depends on the size of the potato so keep your eyes on the oven. 


Put one potato half on a plate, open it a bit by firmly pressing it together. Put some pulled pork over the potato, drizzle with some juice from the pot. Then add the pickled veg, some sour cream and fresh parsley on top. If you feel like it, serve with some of the juice (stock) from the pot (you might need to taste it a bit before, put some salt and pepper). Serve and bon appetite!
