American dream in a dip! It has been kind of a mission for me to make a real spinach- and artichoke dip. After reading many recipes and study it a bit this one is the result. It's a dip you dream of when you have the dip-urge. It's suitable for a party, a friday night in, birthdays...just anything. The recipe is quite big but I recommend you make it all and put some in the freezer for later on dip cravings! 


2 tbs oliveoil
2 tbs butter
1 white onion, diced
2 garlic cloves, minced
4 tbs flour
1 1/2 cup chicken-stock
1 1/2 cup cream
1 cup grated parmesan
1 tbs lemon juice
1 tbs sugar
5 tbs sour cream
1 cup grated cheddar
450 g frozen spinach, defrosted and drained
170 g artichokes, canned, cut into cubes
3/4 tsp Tabasco sauce

Melt the butter and oil over medium heat. Add the onion and soften for few minutes. Add the garlic and soften without browning it. Sprinkle the flour and whisk for two minutes. Pour the stock in the mixture, slowly, and whisk constantly until smooth. Add the cream when the mixture starts to simmer. It should get the simmer up again before removing from the heat. Add the parmesan, lemon juice, sugar and sour cream. Whisk until incorporated. In goes the cheddar. Then the spinach and the artichokes. Stir all together and let the cheese melt completely. Taste with the Tabasco. Serve warm with nachos or tortillas.
