The first recipe of the year on Home and Delicious is the one we feel was the most popular in our family 2015! The recipe we all think is delicious, we always enjoy eating, we can make in few minutes but is always kind of special. It is a bruschetta with parma ham, rucola and cream cheese or goat cheese sauce. As our Kaja is super picky in what she eats (very difficult for our parents who love food of all kind) she loves this dish the most of all. The recipe is originated from our favourite restaurant of all time here in Reykjavík, La Prima Vera, that sadly has been closed. To dry our tears, on regular basis we cook something similar to what we got there. Like this bruschetta. For all you fans of Italian food, and all the others too, let's try this recipe. Read more. 

There is no recipe, more like some idea of how to put the dish together: 

–Sour dough bread or your favourite one to make bruschetta
–Garlic clove, cut in half, very good olive oil
–Parma ham
–Ruccola, very good olive oil, lemon juice, salt and pepper
–Soft cream cheese or goat cheese (the original recipe is with goat cheese and we often use it), cream, salt, pepper and half a tsp of powdered stock (you can skip this if you don't have it)
–Grated parmesan

Slice the bread and put on grill for few minutes without the bread being crusty. Rub the garlic over the bread, drizzle some olive oil over the slices. 

Drizzle some olive oil over the salad, some fresh lemon juice, salt and pepper to taste. 

Melt the cheese in some cream (125 g of cheese in 2,5 dl of cream), salt and pepper to taste and use the stock in this purpose too.

Now arrange the bruschetta; bread, ruccola, parma ham, drizzle some sauce over and then some parmesan. Serve with more sauce if you feel to.
