Finally some fish recipe on Home and Delicious. Not often enough, I know. Probably because HBG isn't so keen cooking fish, more for enjoying it. GS is a lot better in that field and has done many great dishes. But this recipe is something we've enjoyed during Easter time though it's not at all a special recipe for that season. Therefor it's now on Home and Delicious, for you to try and enjoy. It's related from my mother's friend who has a Portugese husband and my mother does this dish perfectly. Read more for the recipe. 

1 kg salted cod, boiled and drained
1 onion, diced
4 garlic cloves, cut finely or crushed
5-6 eggs, beaten
2-3 bay leaves
2 dl very good olive oil
sea salt and black pepper
1 dl finely chopped fresh parsley
black olives
600 g potatoes, cut like french fries, deep fried and drained a bit

Heat the oil in a deep pan, soften the onion and the garlic without browning it. Add the bay leaves for few minutes. Tear the cod down into the pan, finely. Stir and combine. Taste with pepper. Turn down the heat. Add the eggs and stir well to combine. Turn the heat on again for few minutes and stir.
Add the fried potatoes, with care to not brake them down too much. Then the parsley. Taste with some salt if needed.
Decorate with some parsley and black olives. Good to serve some more olives with the stew. Also some fresh salad and bread.
